Low Fodmap Sausage and Peppers
I love that this dish tastes like I slaved over it. Slowly poaching the sausage in the sauce results in some seriously tender links, as well as a rich and tangy sauce with herby depth. While it’s not quite a one pot meal, it requires only 15 minutes of effort, and definitely qualifies as quick and easy.

Ingredients
3 Bell Peppers (yellow, orange, and red)
¼ cup Parsley
2 Green Onions (tops only)
1 tbsp Fresh Oregano (optional)
1.5 lbs (24 oz) Baby Gold Potatoes
2 lb. Mild Italian Sausage
1 tsp Salt
¼ tsp Fennel Seeds
¼ tsp Whole Peppercorns
¼ tsp Crushed Red Pepper
1 Bay Leaf
3 oz Tomato Paste
28 oz Diced Tomatoes
2 tbsp Garlic Oil
¼ cup Water
2 tbsp Red Wine Vinegar
1 tsp Italian Seasoning
Garnish (optional)
Parsley, Basil, or Green onion
Garlic Oil
Parmesan
Instructions
Preheat Oven. 450 degrees.
Prep Ingredients. Start by destemming your chili peppers and oregano (if using), then cut chili peppers into long strips. Chop herbs, set aside. Crush fennel seeds and peppercorns. Quarter potatoes (halve if on the smaller side. Lastly, cut each sausage into 3 or 4 pieces.
Layer Ingredients. In a large roasting pan, mix sausage and potatoes in a single layer at the bottom of a large roasting pot or casserole dish. Next, layer peppers, salt, and then herbs.
Make Sauce. In a small, dry saucepan over medium low heat, start by toasting fennel seeds, peppercorns, crushed red pepper flakes, and bay leaf. Once they become aromatic, add tomato paste, diced tomato, garlic oil, water, vinegar, and italian seasoning. Simmer until mixture is well combined, about 5 minutes.
Add Sauce. Pour sauce over sausage, potato, pepper mixture. Mix well. Cover with lid or foil.
Bake for 1 hour at 450 degrees.
Let Cool. 5 - 10 mins
Serve with a piece of rustic gluten free bread. Garnish with basil or parsley and a sprinkling of parmesan.
