Chocolate Lava Mug Cake

Ingredients:
2 oz Dark Chocolate
2 tbsp Butter
1 Egg
1 tsp Gluten Free Flour
1 pinch of Salt
Instructions:
Melt Chocolate. Start by crushing 2 ounces of chocolate and adding it to a small microwave safe mug along with 2 tablespoons of butter. Microwave for 30 seconds until melted. Remove from the microwave and mix until smooth.
Make Batter. Next add one egg and a pinch of salt and whisk together until smooth. Then add 1 teaspoon of gluten free flour. I like to use Bob’s Red Mill 1:1 Gluten Free Baking Flour.
“Bake.” Give your batter one last mix, scrape down the sides, and microwave for 35 seconds.
Serve. I like to serve up this mug cake with a splash of heavy cream to give it a creamy, ala mode vibe without adding all the sugar of ice cream. ;)
NOTES:
Exercise Restraint. Once you figure out how easy this is to make, you’re going to have to be disciplined enough to not make this chocolatey treat every night! Eating too many sweets WILL throw off your microbiome and disrupt your gut health, even if it’s gluten free.
Mix it up! Trying adding a little nut butter, coconut shavings, and fresh fruit like blueberries, pitted cherries, or even cranberries to this recipe to put a fresh spin on it!
